Loading... Please wait...Dentogi is our own name for traditional Japanese knives manufactured by the Yoshida family. Dento means traditional and gi means skill, the Kanji used for 'to' is a Kanji which also means blade. The Denogi knives are made of a core layer of very hard (Hrc64) rust resistant SKG die steel, originally designed for cutting metal. This is clad with softer SUS-405 stainless steel. Mr. Yoshida is very proud of the hand hammered surface and distal taper. The distal taper results in a perfect balance and the hammered surface reduces the likelihood of food sticking to the side of the knife while chopping.
The handle is formed from Ho wood, the traditional wood jor Japanese handles. This wood, which is a relative of magnolia, holds up extremly well in the harsh environment of the kitchen. A buffalo horn ferrule adds nice contrast
Each knife is sent in a nice gift box.
The Yoshida family has a long tradition for making knives and all their knives are handmade. Mr Tsuneo Yoshida is the proud blacksmith in the 3rd generation. The knives made in the factory in Tsubame Sanjo are called Yoshikane.
The first step in making these traditional Japanese knives is to heat a piece of high grade steel.

Then the steel will be flattened with a hammer.

This process will be repeated many times with different layers.

When the blades are finished the sharpening process starts.

And the knifemaker finally engraves the finished knives.
