Physical Characteristics of copper
Copper is brilliant in the range of metals. It is the best metallic conductor, apart from silver.

There is a constant spread of temperature from base to sides. Sauces will no longer burn nor separate. Melting chocolate will become child's play.
Copper is perfect accumulator of heat. Your delicious stews can simmer for hours.

Ecology
A red copper pan is a "green pan". The ideal conduction and the optimal accumulation will allow you to save energy. This can lower your energy bill.
The Look

Copper has been associated with gastronomy for many generations.
It stands for class and perfection, is timeless, and fits perfectly in all kitchen interiors.

New Technology
Falk Culinair specialises in manufacturing professional grade cookware.
Thanks to new technology research a special bi-metal copper has been introduced to the market. A thick plate of massive 2.5 mm copper and a very thin layer of stainless steel are rolled together under extremly high pressure. All thermal conductivity advantages of massive copper are maintained. In addition, the inside layer of stainless steel is permanent and will not melt.
Here is a brief overview of how the cookware is produced :

Craftmanship
The proportions, shapes and rounding of the lip is designed in collaboration with professional chefs.
All models have lips and can be used on conventional stoves.
The grips are ergonomically manufactured out of indestructible cast iron.
Maintenance

For generations chefs have always preferred pots and pans of solid copper because of their practical benefits. However classical shiny copper pans require intensive maintenance. Falk Culinair has limited such maintenance significantly based on two important enhancements:
All models have an exterior brushed finish. This satin finish is easily maintained with a very fine sponge (i.e. Scotch Brite).
The interior stainless steel layer will resist abrasion or oxidation and ensures cooking takes place on a hygienic surface.
Do not use your dishwasher for the cleaning of coppercookware!
What About Induction ?

The bi-metal range of cookware is best used on classic stoves with gas or electric heating elements.
As copper is not inductive, a massive cast iron plate can be positioned on the magnetic field.
This cast iron plate, available from this site, will allow you to use all bimetal cookware, conserving all its culinary advantages.
