Dentogi Ami Gyuto Knife with a 210mm blade
Dentogi is our Prochef own brand, we are using some selected makers fro Japan to offer high quality blades for our customers. Dentogi is translated as “traditional craft” and the middle Kanji To is replaced with the same pronounced Kanji To which means Knife.
The Ami series is forged in a small factory in Tsubame-Sanjo in the Niigata prefecture. Ami is the Japanese word for net, which came to our mind when we first saw these beautiful knives.
This range has core of semi stainless SLD steel which is clad into softer stainless steel. SLD steel is a Hitachi steel which was originally designed as a tool cutting steel. It’s very similar to SKD steel and these steels are used by several blacksmith in Tsubame Samjo. SLD has a very good edge retention, is quite hard but still relatively easy to sharpen and doesn’t need a lot of care compared to carbon steel. The maker uses a special X shape hammer for the forging and that creates the beautiful pattern which also helps that food will come off the blade a bit easier.
The octagonal handle is made out of cherry wood with a purple heart ferrule.
The Gyuto knife is a multi purpose chef knife, similar to the European style chef knives, it is a bit longer that the Santoku and can be used as the universal kitchen knife, it is the most popular shape in NZ.
