Hirokuni Shirogami1 Chuka Knife with a 180mm blade.
Yukihiro Sakai is a young talented blacksmith who is not using pre-laminated steel, he is doing that himself. Shirogami1 is the favorite steel for traditional carbon steel knives. The steel is reactive and develops a patina on the exposed butting edge. The cladding is done with some soft iron and it comes with a kurochi finish.
The Chuka knife is about twice as tall (70mm height) as the normal Nakiri and if you don’t like round corners you will like this one.
The oval handle is made from cherry wood with a plastic ferrule.
