Hirokuni Shirogami1 Santoku Knife with a 240mm blade.
Yukihiro Sakai is a young talented blacksmith who is not using pre-laminated steel, he is doing that himself. Shirogami1 is the favorite steel for traditional carbon steel knives. The steel is reactive and develops a patina on the exposed butting edge. The cladding is done with some soft iron and it comes with a kurochi finish.
This is massive Santoku, it feels like a mighty Gyuto. Our longest Santoku!
The oval handle is made from cherry wood with a plastic ferrule.
