Kajiwara Black Damascus Gyuto knife with a 240mm blade.
The Kajiwara Black Damascus range is made out of an Aogami 2 (blue paper steel) carbon steel in a nice damascus finish The knives are not clad in stainless steel so they are subject to tarnishing. Aogami #2 is well known for durability and is a very popular steel for high performance hand made Japanese knives. The black kurochi finish is what the steel looks like after the forging process, it gives the knife a rustic touch and also protects the blade. The octagonal Magnolia handle comes with a buffalo ferrule. The Kajiwara knives are a good workhorse in any busy kitchen environment.
