Masakage Shimo Santoku knife with a 170mm blade.
The Shimo range is made out of hand forged high carbon White Paper Steel (Shirogami) which is clad in several layers of carbon steel. Shimo is the Japanese word for frost and when you look at the surface of the blade you can see where the name comes from, it looks a bit like ice in a frozen window. Mr Kurosaki who makes these blades designed a special hammer for that. The octagonal handle is made out of Magnolia wood with a pakka wood ferrule. These knives are not stainless, they need to kept dry and maybe oil the blade from time to time, but they are a real pleasure to use.
