Mr Saji has his workshop in Takefu and he does a lot of interesting knives. Each knife is entirely hand made and because of the high quality of his unique products the waiting time is now several years. For the knife here he uses Ginsan Steel which is stainless and a stag handle. Beside the unusual shape the handle is very comfortable. The handles can look slightly different from knife to knife as per the nature of the handle material. A different way to cut your sashimi and also a great gift or collectors item.
