Takeshi Saji SRS13 Gyuto Knife with a 210mm blade.
Mr Saji has his workshop in Takefu and he does a lot of interesting knives. Each knife is entirely hand made and because of the high quality of his unique products the waiting time is now several years. For the knife here he uses SRS13 stainless steel. SRS13 is very similar to R2/SG2 powdered steel. The hammering is slightly different to the usual tsuchime finish by using a special hammer to get a diamond shape finish. The western style handle is made out of Desert Ironwood. This is a nicely balanced knife for the pro environment!
