Sakon Ginsan Nakiri knife with a 165mm blade
Sakon Ginga knives are made in Tosa-Yamada in the Kochi prefecture on Shikohu island in Japan.
Gingami No.3 (or Ginsan) is classified as a stainless steel because of it’s higher amount of chromium. Even it is a stainless steel it feels more like a shirogami or aogami steel and is reasonably easy to sharpen on a whetstone.It is hardened to 61hrc and the Gingami core is clad in SUS405 steel.
The Nashiji finish help that food is not sticking to the blade and gives the knife a nice rustic look.
The blade comes with a Hoo wood handle and a buffalo horn ferrule.
