Senzo Black Damascus Sashimi knife with a 210mm blade.
Senzo knives are made by Suncraft in Seki, one of the traditional knife making centers in the Gifu Prefecture.
The blade has a VG-10 core layer clad in 16 layers on each side. VG-10 is one of the most popular high grade stainless steel for kitchen knives. The damascus pattern on these knives have a deeper dark finish which creates a nice classy finish. The handles are made out of brown and black pakka wood with a white fiber spacer.
The 210mm Sashimi is a used for cutting smaller pieces of fish for nigiri but it can be also used as a slicer knife. It is a double bevel knife so good for right and left handed use.
