Senzo Twisted Octagon Santoku Knife with a 165mm blade.
Senzo knives are made by Suncraft in Seki, one of the traditional knife making centers in the Gifu Prefecture.
The blade has a VG-10 core layer clad in 16 layers on each side. VG-10 is one of the most popular high grade stainless steel for kitchen knives. The handles are a mix of classic Japanese and western style. The traditional octagon handle has a slight twist to allow a more comfortable and firm grip. Made out of very light brown pakka wood and a steel bolster for durability.
The 165mm Santoku is the main knife in any Japanese kitchen.
