Kougetsu Shirogami Nashiji Nakiri Knife with a 160mm blade.
These knives are using the a shirogami (white paper) carbon steel core and are clad with stainless steel to protect the blade and reduce the blade care to a minimum. Shirogami is one of the most popular Japanese knife steels, hard and relatively easy to sharpen with a very good edge retention. The nashiji finish comes from the Nashi pear as the finish looks a bit like the Nashi pear skin. It gives the knife a nice rustic finish and also it helps that food is not sticking to the blade. The handles are made out of ichii wood.
