Tojiro Shirogami Usaba knife with a 180mm blade.
The blades are made out of high carbon Shirogami steel forged together with soft iron. Shirogami steel is reactive so please keep the knives dry and oil the blade from time to time. The handles are made out of oak wood with a resin bolster.
Usaba knives are single bevel vegetable knives, very similar to Nakiri knives. This knife is not suitable for left hand users.
