Tosaichi knives are made in Tosa-Yamada in the Kochi prefecture on Shikohu island in Japan.
Aogami Super is the most advanced steel out of the Aogami range and is hardened to 63hrc, the carbon steel core is clad in stainless SUS405 steel to protect the core layer and reduce the maintenance.
The knives come in a Tsuchime finish from the hammer marks during the forging., that is a nice original look and also helps that food is not sticking to the blade. The handle is made out of rosewood.
